I made an amazing dinner the other night. Nate had bought some cod fillets as we are trying to eat healthier meals. The issue is - he doesn't really like fish if it tastes like fish. It needs to have a sauce or a strong flavour for him to like it. So... I seared it in two cloves of garlic, some butter and a tablespoon of lemon juice. After each fillet was a little brown, I put them in the oven at 350F. I had put some wild rice on first as it takes FOREVER to cook, but is so much better for you then the white rice. Then I boiled some asparagus for 3 minutes then placed it on my stoneware with some butter, garlic, lemon juice, basil, & a 1/2 cup of freshly grated parmesean cheese. Then put it under the broiler. The last touch was some frozen corn - usually I cook it in my Pampered Chef steamer with water and garlic - this time I decided to go all out with my lemon theme and used lemon juice instead of water. Just a tablespoon - plus some basil.
All together everything was amazing. The lemon wasn't overwhelming, but it really popped in the corn (no pun intended!!). The asparagus wasn't truly healthy, but I would make it again - soooo good.
And the fish... not fishy at all.

Mmm, sounds yummy Sara. Very healthy and tasty - good combinations!
Tonight I made fish sticks. That's the extent of my "gourmet-ness". Ahhh, life with kids. No time, and even if you had time, they wouldn't eat what you made. C'est la vie n'est pas?

ps. i can't seem to log in an publish on your your site...odd.
Okay so if I ate fish - that sounds like a nice meal. Way to go New Mommy - cooking up a storm for your man and caring for your little man... It's a bigger accomplishment then most people realize with a new baby at home! :)
